Chicken Ceasar Salad

We bought ‘the fast 800 recipe book’ and this is a meal it recommends.

Ingredients: Salad

Chicken Breast: 200g cut into bitesize pieces

Little Gem Lettuce: 2 trimmed and separated

Cherry Tomatoes: 12, halved

Mixed Seeds: 20g

Parmesan: 20g, finekly grated

Ingredients: Dressing

Greek Yoghurt: 75g

Garlic: ½ clove, peeled & crushed

Mixed Herbs: a pinch

Extra Virgin Olive Oil: 1 tablespoons

Instructions

Dressing:

  1. Combine the Greek Yoghurt, garlic, mixed herbs, extra virgin olive oil and 2 tbsp cold water and mix well.
  2. Season with a pinch of salt and a generous helping of ground black pepper.

Salad:

  1. Wash the lettuce and drain well.
  2. Divide the leaves between the two servings and sprinkle the tomatoes on top.
  3. Place the chicken on top and sprinkle with seeds and the finely grated Parmesan cheese.
  4. Drizzle the dressing over the salad and serve.

The seeds are for the crunch factor but you could replace with croutons. 25g of croutons will add on another 100kCal to the recipe!
