Keto Garlic Bread

On our trail to find differnet foods for our Keto Diet we came across this recipe and its divine!

Ingredients

Mozzarella: 600g shredded

Cream Cheese: 60g

Eggs: 3 medium

Almond Flour: 150g

Baking Powder: 1 tsp

Bacon Bits: 75g cooked

Parmesan: 45g grated

Browned Butter: 60g (if you dont have access this you can make it as below instructions)

Italian Seasoning: 1 tsp

Garlic: 4 finely minced cloves

Fresh Parsley: 30g chopped

Instructions

  1. Grease a medium cast-iron skillet with oil, butter or cooking spray and set aside.
  2. In a shallow plate, combine Parmesan and Italian Seasoning.
  3. Melt Mozzarella and Cream Cheese in a large bowl for one minute in the microwave. Mix well with a spatula until smooth
  4. Combine the Melted Cheese, Eggs, Baking Powder, Almond Flour, and Bacon Bits. Mix until smooth.
  5. Using a large cookie scoop, scoop dough and bread roll into the Parmesan and Italian Seasoning mix. Place each bread roll into the prepared cast iron skillet. Sprinkle bread roll with more Parmesan. Place skillet in the refrigerator for 10 minutes. In the meantime, preheat your oven to 200ºC.
  6. Remove the cast iron skillet from the refrigerator. Bake the bread for 20 to 25 minutes, until golden brown.
  7. In the meantime, combine minced Garlic, Chopped Parsley, and Browned Butter in a small bowl.
  8. Brush generously the bread with the garlic butter sauce and serve. Enjoy!

Instructions for making Browned Butter

  1. All you just need to do is cut regular butter into chunks and heat it in a pan on medium heat for 5-10 minutes.
  2. Keep whisking and watching the butter and it’ll start to melt and foam up. You’ll also see the white milk solids separate and fall to the bottom of the pan
  3. Be sure to keep whisking so that the foam doesn’t obstruct your view of the milk solids at the bottom. They’ll be the first to start to turn a deep caramel color, after about 5 minutes or so. Finally, when it looks like this, you’re all set.
  4. Immediately remove it from the heat and transfer to a heatproof container. Be sure to scrape up all the brown bits that are at the bottom of the pan — that’s where the nutty flavor is most pronounced!
