Keto Cheeseburger Chaffles

Ok so we’ve just started a Keto Diet and this has been very highly recommended to us!

note: recipe makes 2 cheeseburger chaffles

Ingredients

FOR THE CHAFFLE

Egg: 1 medium

Mozzarella Cheese: 1/2 cup

Coconut Flour: 1tsp

Baking Powder: 1/4 tsp

Garlic Powder: 1/8 tsp

Italian Seasoning: 1/8 tsp

Salt: just a pinch

FOR THE CHEESEBURGER

Ground Beef: 2/3 lb

Cheese Slices [Cheddar or Blue Cheese] : 4

Pickle Slices: 4-6

Little Gem Lettuce: 4-6 leaves

Diced Onion: half handful

You’re also going to want some Big Mac sauce ready to go…

Low Fat Mayonnaise: 1/2 cup

Relish: 2 tbsp

English Mustard: 1 1/2 tbsp

BBQ Sauce: 1/2 tbsp

Apple Cider Vinegar: 1 1/2 tbsp

Garlic Powder: 1/2 tsp

Onion Powder: 1/2 tsp

Paprika: 1/2 tsp 

Salt: 1/4 tsp

Instructions

  1. Preheat oven to 200 degrees. Preheat waffle maker as well.
  2. In a small bowl, combine Egg, Mozzarella Cheese, Coconut Flour, Baking Powder, Garlic Powder, Italian Seasoning, and Salt.
  3. Pour half of the chaffle mixture into the center of the waffle iron. Allow to cook for 3-5 minutres.
  4. Carefully remove and repeat for second chaffle.
  5. For the burger, make 2x patties with the Ground Beef [I like to add a dollop of ketchup to sweeten] and cook to your preference. Add the Diced Onions to soften towards the end too and melt the Cheese Slices over ther top.
  6. Top each pattie with the with the Little Gem Lettuce and Pickle Slices.
  7. For the Big Mac sauce put all the ingredients in a bowl and mix. You can keep this in the fridge for up to 2 weeks if there are any leftovers. Enjoy!
