Sesame Salmon with Broccoli & Tomatoes

We bought ‘the fast 800 recipe book’ and this is a meal it recommends.

A nice and easy recipe which is a breeze to knock up. The spice and crunch from the Sesame seeds definitely adds to the appeal here.

Ingredients

Salmon Fillet: 2, 125g fillets

Spring Onions: 6, trimmed and cut into 3 pieces

Cherry Tomoatoes: 12

Long Stemmed Broccoli: 200g, trimmed

Sesame Seeds: 1 tsp

Crushed Chilli Flakes: ½ tsp

Dark Soy Sauce: 1 tbsp

Sesame Oil: 1tsp

Rapeseed/Olive Oil: 2 tsp

Instructions

  1. Preheat oven to 180°c. Drizzle the Rapeseed/Olive oil onto a baking tray and rub around with a paper towel to coat the surface.
  2. Place the fillets on the tray skin side down and add the spring onions and tomoatoes. Season with plenty of black pepper. Bake for 8 minutes.
  3. Meanwhile, fill a pan with ⅓ water and bring to the boil. Add the broccoli and simmer for 4 minutes.
  4. Remove the tray from the oven and add the broccoli . Drizzle the soy sauce and sesame oil over the fish. Sprinkle everything wiht the chilli flakes and the sesame seeds and return to the oven for another 4 minutes or until the salmon is just cooked.
  5. Divide between 2 warmed plates and serve.
